In the traditional “dry conching” process, the chocolate is intentionally deprived of some of the fat in the recipe. Due to this semi-solid physical state, traditional conches require more energy to mix the product within them.

Tecno3 thinks out of the box!

All the necessary fats are present in the recipe from the start, creating a liquid mass in which the fast conche can move efficiently, using only a fraction of the energy required by the traditional conche. And thanks to the evaporation tower, both tastes and rheological characteristics are improved!
