Quick conches
The TECNO 3 quick conches have been designed to meet the needs of the modern chocolate industry, which processes fine quality paste while respecting traditional production processes.
The choice to apply the chocolate fluid conching technology is dictated by the need to always have an accurate control of the temperatures in the mass and to drastically reduce energy consumption.
The salient construction features are represented by the machine body, in which rotates a single shaft with specially designed reels to ensure an intensive mixing, and by the cooling tower that favours the quick removal of humidity and unwanted cocoa volatile substances, by means of thin layer treatment. Consequently, the processing times are very limited and certainly comparable to those obtained with dry conching.
The accurate temperature control throughout processing allows the desired aromatic profile to be obtained, in accordance with the cocoa varieties used and the set recipe.
The fast conches are made of AISI 304 stainless steel, have a range of production capacity from 200 kg. to 6000 kg. per batch and comply with Directive 2006/42/EC.
The conching program is entirely managed by PLC.
